Two Tails Sauvignon Blanc
Two Tails is a brand new wine from boutique Marlborough Sauvignon Blanc producer Fairbourne Estate. Specifically designed to support their premium Fairbourne wine, it hits a lower price point whilst delivering the quality and value Fairbourne is renouned for. Two Tails arrives in the UK for the first time in October 2010.

Wine style
Made dry with a tropical fruit expression and balanced with Marlborough's natural acidity. Two Tails is an approachable, expressive and flavoursome Marlborough Sauvignon Blanc.
Vineyards
The grapes for Two Tails are grown on two vineyards with two and three cane vines in Marlborough's Wairau Valley. One vineyard is in Marlborough's centre valley on older river gravels overlaid with clay gravels from the southern valleys. Its north facing slope produces grapes with ripe tropical flavours. The other vineyard, further to the west on an old river terrace, has stony river gravels producing grapes with citrus and gooseberry attributes.
Winemaking
The grapes were fermented in stainless steel tanks with selected yeast strains to capture their individual fruit expressions. A selected blend of the fermented wines resulted in a style consistent for Two Tails. The wine exhibits the vibrant, characteristic qualities of Marlborough Sauvignon blanc in an expressive style.

Serve... Chill to between 12 and 14 degrees then serve and enjoy
Aroma... Pineapple and guava with fresh crushed limes
Taste... Quenching pineapple and passion-fruit with balanced natural acidity
Finish... Dry with a persistent zesty aftertaste
Cuisine
We recommend fresh seafood. Oysters and salmon are a natural accompaniment for New Zealand Sauvignon Blanc and this wine is no exception. Also exciting is a tomato based salsa with avocado and a touch of chilli, as is a citrus dressed, fresh green salad with crumbled feta and crispy smoked bacon.
