Fairbourne Estate
Fairbourne Estate is owned by founders Sarah Inkersell and Russell Hooper. They only make Sauvignon Blanc to an exceptionally high standard. Russell Hooper has worked for the past fifteen years or so in the export markets with New Zealand wine, so it seemed natural that when he and wife, Sarah started Fairbourne, that the sales would be to the export market.

Wine style
Fairbourne is a unique dry white wine grown on north facing hillside vineyards in Marlborough's Wairau Valley. The hillside vineyards have low fertility and vines grow with low vigour producing grapes with identifiable varietal and site characteristics. These are carefully harvested and managed to produce a uniquely superior wine.
Vineyards
The grapes for Fairbourne are grown on north facing hillside vineyards. The soil structure is of deep clay gravel. Vines are pruned to two canes with a vertical shoot regime. The hillside presents the vines for optimal sun exposure allowing full ripening. The grape flavours are of ripe citrus and pineapple framed with a mineral structure from its soils.
Winemaking
The grapes were fermented as site batches with selected yeast strains to capture their individual fruit expressions. The wine was fermented in temperature controlled stainless steel tanks over a four week period. A judicious blend of the finished wines created a pure and expressive style of Sauvignon Blanc that we consider uniquely superior. Fairbourne shares the characteristics of the vineyard with regional and varietal expression.

Taste... Fresh citrus entry, a smooth tropical and flinty mid palate
Finish... Dry with persistent fresh, pure and definable Sauvignon Blanc
Cuisine
Fresh shucked Oysters are a natural accompaniment for New Zealand Sauvignon Blanc and this wine is no exception. Salmon pairs well with this wine, as does a fresh salad of asparagus and chilled melon with a citrus drizzle. My favourite is cold smoked salmon with a mild wasabi mayo.
